Recipe for herring baked in the oven in foil

To prepare herring in foil you need:

  • Two large herrings;
  • 2-3 onions;
  • Salt;
  • Bay leaf and herbs;
  • Pepper.

How to deliciously bake whole herring in the oven

1. Like any fish, herring must be gutted before cooking. To do this, you need to cut the abdomen and carefully remove not only the insides, but also all the dark films. If you have caviar or milk, you can bake them along with the fish.

2. Rinse the fish.

So, let's clean our fish. We cut off the head and tail, take out the insides. And if you are lucky enough to have caviar or milk in your fish, don’t throw it away. We will need them.

Rub the herring with salt, pepper and any spices. Don't forget to do the same with caviar and milk.

Now we need to cut one onion. And then stuff our fish with onions and (if available) caviar (or milk). Place the stuffed fish on foil, sprinkle with onions and wrap well in foil to prevent the juice from leaking out.

Bake the herring in foil in the oven for 20 minutes at 180°C. After 20 minutes, remove the fish from the oven. Unwrap the foil and return the herring to the oven for 10 minutes to brown.

How to cook

Buy frozen or fresh herring and remove the scales. If the fish is frozen, then you do not need to defrost it - it is better cleaned in this state. After this, rinse the herring and gut it, leaving only the caviar or milt. Be sure to clean off the black film from the inside of the carcasses, if present, as the film is very bitter in the finished dish and spoils its entire taste. Cut off the heads, fins and tails of the washed fish. Grease a baking dish with vegetable oil and place the herring carcasses in it.

Whisk the egg yolk and vegetable oil in a separate container, brush the resulting sauce onto the fish carcasses inside and out. If caviar or milt is present, add it to the carcasses. Of course, you can show your imagination and stuff the herring with slices of peeled and washed potatoes, tomatoes, onions, etc. - the dish will turn out much tastier!

Preparation:

  4. We cut the belly with a knife and clean out all the insides. Now we carefully remove the ridge and take out the large bones.
  5. Turn the fish over and spread it along the ridge.
  6. Once again, thoroughly wash the fish fillet and dry it with paper napkins.
  7. Squeeze the juice from half a lemon using any convenient method. Using a vegetable peeler or fine-perforated grater, remove the zest.
  8. Peel the onion, cut into large pieces and grind to a puree consistency. The vegetable can be twisted in a meat grinder or chopped in a blender or food processor.
  9. Rub the inside of the herring fillet with salt. Pour over freshly squeezed citrus juice and add lemon zest.
  10. In this form, leave the fish to marinate for at least a third of an hour.
  11. After the allotted time has passed, sprinkle the herring with black allspice. Place onion mixture on top of the fillet.
  12. Wash the dill thoroughly and dry. Finely chop the greens with a knife.
  13. Distribute the chopped dill evenly over the herring fillets.
  14. Roll the herring fillet into a tight roll. To fix it, you can use a piece of ridge or a toothpick.
  15. You can lightly sprinkle freshly squeezed lemon juice on top of these rolls.
  16. Grease a refractory ceramic mold or baking sheet with a small amount of refined olive oil or sunflower seeds.
  17. Transfer the herring into a container.
  18. Cover the top of the pan with aluminum foil and place in the oven.
  19. Bake at 200° for 25-30 minutes.
