How to prepare canned tomato and cucumber salad for the winter

I make the salad in quart jars. Therefore, the calculation of products will be just for this volume. Let's get started! The photo shows the products that will be required for preparation.

Pour a little vegetable oil into the bottom. A couple of teaspoons will be enough. Slice cucumbers and tomatoes. The shape and size of the cut does not matter. Cut as you like. We put them in a jar. Better - in layers, adding onion rings and garlic cloves - to taste. If your cucumbers have thick skins, you can peel them. I sometimes even use large overripe fruits for this salad. Here's how I did it.

At this time, boil the water. And in the jar we put 2 teaspoons of salt, 1 teaspoon of granulated sugar, 2 tbsp. directly on the vegetables. spoons 9% vinegar.

Pour boiled water over the future salad.

Sterilize the lid. Cover the jar with it. Place the salad in a saucepan with water. We send the pan to the fire. 20 minutes. It is better to first place a small towel on the bottom of the pan. This will help the jar not to “bounce”.

Remove the jar from the boiling water. Let's roll up. No need to wrap it up. Just leave it to cool in the air.

  • tomatoes 750 g
  • cucumbers – 750 g
  • onion – 300 g
  • vegetable oil – 125 ml
  • table vinegar 9% - 1.5 tbsp. l.
  • table salt – 1 tbsp. l.
  • sugar – 1.25 tbsp. l.
  • hot pepper optional

Yield: 2 jars of 600 ml.

Preparation

1. Prepare the necessary vegetables: wash the cucumbers and tomatoes thoroughly, remove the skins from the onions.

2. Take a large bowl or pan. Trim the ends of the cucumbers and check them for bitterness. Cut into thin slices. If the cucumbers are large in diameter, then you can use half slices.

3. Cut the onion into strips or halves of rings. Pour into a bowl with the cucumbers.

4. Also cut the tomatoes into small pieces, slices or halves of circles. Send them to the rest of the vegetables.

5. Pour the amount of vegetable oil specified in the recipe into a bowl; it is advisable to take refined oil - it has no taste or smell. Also add table vinegar.

6. Add salt and sugar to the bowl with vegetables.

7. Mix everything well and let stand for 10-15 minutes so that the vegetables release their juice.

8. Place the pan with vegetables on the stove, simmer them over low heat, stirring, for about 20 minutes. The cucumbers should take on an olive tint. Try right away what the salad may be missing - salt, sugar. Maybe you want to add some spice - then the salad definitely lacks ground red pepper.

A simple salad of cucumbers and tomatoes is a frequent guest on our tables. Of course, in winter you can buy fresh vegetables in any supermarket. But these winter varieties are significantly inferior in taste to cucumbers and tomatoes “fresh from the garden.” Therefore, it is worth preparing cucumber and tomato salad for the winter during the season. To prepare a salad for the winter, you need to choose perfectly fresh and strong vegetables without the slightest sign of spoilage. In addition to cucumbers and tomatoes, other types of fruits and vegetables can be included in the salad. The most commonly used vegetables are onions and bell peppers. They also use carrots, cabbage, fresh green peas, etc.

The workpiece is prepared in two ways. If the jars are supposed to be sterilized, then fresh vegetables are placed in them. If you plan to make the preparation without sterilization, then it is necessary to stew the prepared vegetables. And then, while hot, the prepared vegetable mass is packaged in sterile, not yet cooled jars and immediately sealed hermetically.

Salad of cucumbers, tomatoes and onions for the winter

  • 4 cucumbers;
  • 3 tomatoes;
  • 2 bell peppers;
  • 1 onion;
  • 2 carrots;
  • 0.5 teaspoon salt;
  • 0.5 teaspoon sugar;
  • 30 ml vinegar (9%);
  • 30 ml vegetable oil.

Peel and thoroughly wash all vegetables. Grate carrots and cucumbers into long strips, as when preparing Korean salads.

Advice! If desired, you can add garlic and herbs to the recipe of this salad.

Heat the oil in a cauldron, place the chopped onion in it, fry until translucent, then add the carrots and fry for another five minutes. You want the vegetables to begin to settle, but not brown.

Add sweet peppers, cut into small cubes, into the cauldron. Using a blender, turn the tomatoes into puree. Grind the resulting tomato mass through a sieve so that it is homogeneous.

Add grated cucumbers and tomato mass to the cauldron, add spices and sugar, and salt. Simmer at low boil for about half an hour. At the very end of cooking, add vinegar and remove the cauldron from the heat. Place the salad in a hot, sterilized container and immediately seal it tightly. Cool without covering with a blanket, turning the jars upside down.

Layered cucumber and tomato salad

This salad is not only delicious, it also looks very beautiful in a jar, as the vegetables are laid out in layers.

  • 0.5 kg of tomatoes;
  • 0.5 gr. cucumbers;
  • 200 gr. sweet pepper;
  • 5 cloves of garlic;
  • 150 gr. Luke;
  • 50 gr. any greenery;
  • 100 gr. Sahara;
  • 100 ml vinegar (9%);
  • 50 gr. salt.

We clean all the vegetables. Cut tomatoes and cucumbers into slices, as when preparing a regular salad. Chop the pepper into strips, and the onion into thin halves of rings. Finely chop the greens and garlic.

Advice! Ideally, for this preparation you need to use yellow bell peppers, then all the vegetables in the jars will be multi-colored.

Place vegetables in layers in pre-sterilized and cooled jars. First the onions, then the peppers. Next come tomatoes and cucumbers. Sprinkle each layer with a small amount of herbs and chopped garlic.

Pour salt and sugar directly into the jars, pour in vinegar. Then add boiling water to the top so that the water slightly overflows. Then cover with lids and place in warm water to sterilize. Heat the jars in boiling water for 15 minutes. Then we roll it up, place it bottom up and leave to cool.

Salad "Assorted"

To prepare the Assorted salad, it is best to take green or brown tomatoes. But you can make this preparation with red ones too.

  • 3 kg of tomatoes;
  • 3 large carrots;
  • 3 kg of cucumbers;
  • 10 large onions;
  • 5 bay leaves;
  • 10 peas of allspice;
  • 150 ml vegetable oil;
  • 150 ml apple cider vinegar;
  • 2 tablespoons salt;
  • 100 gr. granulated sugar.

Pour oil and vinegar into a small saucepan, add bay leaves and peppercorns. Add sugar and salt. Put the mixture on the fire and, after bringing to a boil, remove. The sugar in the marinade must have time to completely dissolve, so the mixture must be stirred when heating.

Peel and wash the vegetables. Cut cucumbers into thin slices and tomatoes into slices. Three carrots and cut the onion into thin rings. Mix everything, pour in the marinade and cook at a very low boil for half an hour.

Place the hot salad in hot sterilized jars and immediately seal tightly. Cool under a fur coat.

“Hunter” salad

The “Hunter” salad turns out to be very tasty; it is prepared from a mixture of vegetables.

  • 1 kg of white cabbage;
  • 1 kg carrots;
  • 1 kg of onion;
  • 1 kg of cucumbers;
  • 3 kg of tomatoes;
  • 1 kg bell pepper;
  • 250 gr. Sahara;
  • 80 gr. salt;
  • 250 ml refined oil;
  • We prepare all the vegetables - we wash them; we clean what is necessary. Take a large pan and lay it out in layers:

    • carrots, cut into thin circles;
    • shredded cabbage;
    • thin onion half rings;
    • wider half rings of bell pepper;
    • thin circles of cucumbers;
    • tomato slices.

Required:

  • Sugar - 6 tbsp. spoons without a slide
  • Apple cider vinegar - 6 tbsp. spoons
  • Mixture of 5 peppers - 0.5 teaspoon
  • Spices: onions, celery, dill umbrellas, garlic, horseradish root, capsicum - all to taste

Cooking method:

1. Vegetables need to be washed, and you can cut off the ends of cucumbers on both sides.

2. At the bottom of the jar we put: onions cut into thick rings, celery sprigs, dill umbrellas, chopped pieces of horseradish root, garlic cloves, half a pod of hot red pepper.

3. Place the prepared cucumbers in the jar. Place more celery sprigs in the center.

4. For tomatoes, use a toothpick to make a puncture in the place of the stalk.

5. Place the tomatoes tightly in the remaining space of the jar. Add more celery sprigs and add half a pod of hot green pepper. That's all, tomatoes, cucumbers and herbs are already in the jar.

6. Pour boiling water into the jar and cover with a sterile lid.

7. Let it stand for 30 minutes.

8. Now we make the brine: pour water (1.5-2.0 liters) into a saucepan, add sugar, salt and bring it all to a boil.

9. Pour the water from the jar into the sink and fill it with boiling brine. Cover with a sterile lid and leave for 15 minutes.

10. Then pour the brine from the jar into the pan. Add a glass of water and peppercorns to the brine and put the pan on the fire.

11. Just before boiling, pour apple cider vinegar into the brine.

12. Using a ladle, fill the jar with vegetables to the top with boiling marinade.

13. Close the jar with an iron lid and roll it up. Turn the jar upside down until it cools completely; you don’t need to wrap it up.

“Assorted” tomatoes and cucumbers for the winter in 1 liter jars

The marinating method occurs by filling the jars 2 times.

Preparation:

1. Place the following spices on the bottom of a sterilized jar: black peppercorns, bay leaves, horseradish leaves, tarragon sprigs, dill umbrellas, cherry or currant leaves, garlic cloves.

2. Place the cucumbers tightly in the jar.

3. We make several punctures on the tomatoes near the stalk and put them in a jar with the cucumbers. It is enough to make 4-5 punctures so that the skin does not crack.

4. Place more dill umbrellas and a horseradish leaf on top of the jar. This way you need to fill all 1 liter jars.

5. Now fill all the prepared jars with vegetables and spices with boiling water to the very brim. Cover the jars with sterilized lids for 30 minutes.

6. We put a special device on the jar to drain water into the pan.

7. In this way, drain the water from all the jars into the pan.

8. Place in a saucepan with water, based on 1 liter jar: 1 tbsp. a level spoon of salt and 2 tbsp. spoons of sand. Place the pan with the marinade over medium heat and let it simmer for 2 minutes.

9. Pour the boiling marinade into jars. Add 2 tbsp to each jar. spoons of vinegar 9%. Immediately screw the lids on.

10. Turn all the jars upside down and leave them like that until they cool completely.

This recipe has been proven over the years with very aromatic vegetables.

Preparation:

  1. Jars and lids must be sterilized.
  2. The greens need to be washed, dried and cut.
  3. Wash the tomatoes and cucumbers thoroughly and prick with a fork. Peel the sweet pepper and cut into slices.
  4. First put greens on the bottom of the jar, then sweet peppers, cucumbers, tomatoes.
  5. Pour boiling water over jars of vegetables for 15 minutes.
  6. Make the marinade: bring water to a boil, add sugar and salt. Fill jars with vegetables with hot marinade.
  7. Add 1 teaspoon of vinegar essence and grain mustard to each 3 liter jar.
  8. We roll up the jars, turn them over, and wrap them warmly until they cool completely.

I took 1 kg of cucumbers + 1.5 kg of tomatoes + 2 onions + a bunch of dill. In total, it turned out to be approximately 4.5 liters of salad (jars 0.5-0.72 l).

What to put in a jar

  • Tomatoes (slices);
  • Cucumbers (slices);
  • Onions (slices);
  • Dill (chopped greens - leaves, without thick stems);
  • On the bottom: bay leaf (1-2 pieces) + black peppercorns (3-5 pieces).

Refueling

per 0.5 l jar

  • Salt – 1 teaspoon;
  • Sugar – 1 teaspoon;
  • Vinegar essence – 2/3 teaspoon;
  • Vegetable oil – 1 teaspoon;
  • Water (boiling water) – pour the vegetables into the jar, not reaching 1 cm from the edge.

How to do

  • Cut vegetables: cucumbers - into slices 3.5-4 cm long (I had medium-sized ones, cut them in half, then each part into slices), tomatoes - into large slices, onions - into rings, dill leaves (without stems) - cut.
  • Layer the salad: Place peppercorns and bay leaves on the bottom of sterilized jars. Then vegetables: cucumbers, dill, tomatoes, onions, then again to the top of the jar. . Add dressing (salt, sugar, vegetable oil and vinegar essence). Pour boiling water (fill level – not reaching 1 cm from the edge of the jar). Cover the jars with clean, sterilized lids - simple iron or (but do not screw, just cover).
  • Sterilize: Place a cloth or napkin on the bottom of the pan for sterilization (so that the jars do not fidget or fall). Place the jars. Add hot water (level up to the hangers of the cans). Bring to a boil and sterilize 0.5 cans – 10 minutes, liter - 15 minutes.
  • Remove the jars from the water and close them. Cool and store at room temperature.
