detailed instructions

Step #1. Do you want the cutlets to be juicy and tender? Then choose meat from the back of the rabbit carcass. Remove the bones. We wash the fillets with tap water. Separate the films. Cut the meat into medium pieces.

Step #2. The peeled onion must be chopped. We send it to a heated frying pan. Fry using oil. As soon as the onion pieces are browned, turn off the heat.

Step #3. The previous recipe used soaked bread. However, it can be replaced with small oatmeal. This will not affect the taste of the dish in any way.

Step #4. We pass pieces of rabbit meat, butter, and fried onions through a meat grinder. Salt. Add your favorite spices. Pour in cream in the required amount. We add oatmeal, which we used instead of bread. We beat one egg in there.

Step #5. The minced meat is almost ready. All that remains is to beat it off or beat it with a blender. Before you start making the cutlets, place the minced meat in the refrigerator (on the middle shelf) for 20 minutes.

Step #6. What are the next steps? Divide the slightly cooled minced meat into parts. We make small cutlets. We bread each of them in flour. Fry in a frying pan, adding melted butter. As soon as the cutlets are covered with a golden brown crust, turn off the heat. Our preparation does not end there.

Step #7. Place the browned cutlets in a baking dish. Place in a preheated oven. At 190-200 °C, the cutlets will cook for 10-12 minutes. Serve them on the table, sprinkled with chopped herbs.

Children need dietary, non-fatty meat, so I offer you a recipe for rabbit cutlets; they turn out very tender, dietary, and juicy. They prepare very quickly and simply. There are many cooking options: in the oven, in a double boiler or in a slow cooker, but I suggest you the fastest way to cook it in a frying pan. We won’t fry them too much, but lightly simmer them. I cook minced rabbit cutlets for children, so I usually don’t add anything to the minced meat except a bun with milk. But if you are cooking for yourself and want a richer flavor, then you can season it with different spices or garlic. These cutlets can be given to children from 3 years old; younger ones are better steamed. Then they turn out to be completely dietary and without excess fat.

Ingredients

  • Rabbit meat – 400 g.
  • Loaf – 1 slice
  • Milk – 0.5 cups
  • Flour – 0.5 cups
  • Onion – 1 pc.
  • Salt, spices - to taste

How to cook rabbit cutlets for children

Most of the pulp is on the legs, cut them off and rinse them well under running water. Now, cut off the pulp. We cut off as much as we can, because the weight of the carcass is different for everyone. Peel the onion and cut into pieces.

Now let's make minced meat for the rabbit cutlets. Let's pass the meat and onions through a meat grinder or food processor. Add salt and a pinch of turmeric. I usually add 2 pinches of spices, just a little spice if I’m making it for children.

Take 2 slices of loaf or bun, but not sweet. Break it into a couple of pieces and put it in a bowl with milk. Let the bread absorb all the milk, this will take 5 minutes if it is fresh.

Squeeze out the excess milk from the bread and add the crumbs to the minced meat. Beat the egg and mix with your hands until smooth.

We form round cakes with our hands and place them in a bowl with flour, roll them on both sides.

And now the question arises: how long to fry the cutlets in a frying pan? First, put them in a heated frying pan with vegetable oil and give them a little crust.

Turn them over to the other side, cover with a lid and simmer for 5 minutes over very low heat.

Remove the cutlets and serve hot to the table. You can serve mashed potatoes or rice as a side dish. Bon appetit!

  • More fleshy rabbits, not young at all. But you can make cutlets from them.
  • White bread is best; it will make the meat even more tender and juicy.
  • The cutlets can be covered with a lid and simmered for 7-8 minutes, or put in the oven.
  • You can add carrots, fresh herbs or cereal to the minced meat, but it depends on your preferences.
  • So, you have found a simple recipe for rabbit cutlets, I hope you like it!

Ingredients:

  • rabbit meat – 380 g
  • pork – 380 g
  • wheat bread - 100 g
  • half a glass of milk
  • egg – 2 pcs.
  • lard - a small piece
  • breadcrumbs - 100 g
  • vegetable oil – 4-5 tbsp. spoons
  • butter - a small stick
  • spices

Preparation:

1. Grind rabbit and pork meat in a meat grinder. Soak crustless bread in milk. Then mix the ground meat, eggs, bread, lard in a bowl. Salt and pepper everything. Pass the resulting meat mass through a meat grinder again - this will give the cutlets additional tenderness.

2. Divide the minced meat into portions, forming cutlets, then bread them in breadcrumbs. Place the meat products in a frying pan heated with oil and fry everything until golden brown. Melt the butter and pour it over the dish when serving.

These cutlets are especially tasty with mashed potatoes, but in any case, the choice of side dish is yours. By the way, rabbit meat cutlets will turn out absolutely amazing if, after frying, you sprinkle them with cheese and bake them.

Rabbit cutlets - steamed deliciously

Ingredients:

  • fillet - about a kilogram or a little more
  • large onion
  • low-fat cream – 70 ml
  • chicken egg – 2 pcs.
  • vegetable oil – 1 tbsp. spoon
  • spices

Preparation:

1. Finely chop the onion and sauté in oil. Pass the rabbit fillet through a meat grinder twice (the second time with cooled onion frying).
Divide the eggs into yolks and whites. Add the first ones together with the cream into the minced meat and mix, beat the second ones (whites) a little and add to the mixture along with salt and pepper.

2. With wet hands, form cutlets and cook in a double boiler for no longer than 13 - 15 minutes. The side dish can be anything - from potatoes and other vegetables to rice or buckwheat porridge. I can suggest colored puree.

Culinary advice

Often, rabbit fillet has a not entirely pleasant odor, which can be removed by soaking the meat in milk, whey, water or wine. For example, milk should be brought to medium temperature (45 degrees - plus/minus) and the rabbit meat should be kept for a quarter of an hour. By the way, you can put your favorite herbs and spices in milk.

For children, rabbit meat cutlets should be prepared without the use of hot spices and with a minimum amount of salt. To do this, grind the fillet twice in a meat grinder, then mix with stale white bread and a pinch of salt. The minced meat should be kneaded well. Then form small cutlets and cook them in a double boiler or in a frying pan with butter.
