From time to time, on a walk on a hot summer day, my children and I allow ourselves to drink a bag of store-bought juice, and very often our choice falls on carrot-apple (or apple-carrot, as you like) juice. We love him. And I also have personal and very stable associations with carrot-apple juice. I fell in love with this juice (store-bought version) while breastfeeding my children. For some reason, then I preferred it and could use carrot-apple juice in large quantities.

I have also tried freshly squeezed carrot-apple juice, and more than once. My juice today is slightly different from freshly squeezed juice in that it does not have pulp and foam, which are inherent in all freshly squeezed juices. The fact is that in the process of preparing carrot-apple juice for the winter, it is recommended to strain the juice itself. But this is done solely for aesthetic reasons, since the pulp in the juice, after bringing it to a boil, turns into a kind of soft flake. It is quite edible, and even tasty, but in jars such juice looks, to put it mildly, not very good. So people filter the juices through gauze.

Apples for apple-carrot juice for the winter are suitable for any variety, even the most sour ones. But the carrot should be sweet and juicy, so try to find one, then the taste of the juice will be simply divine.


Preparing apples and carrots for "juicing". To do this, wash and cut apples into quarters (my juicer “accepts” apples with seeds), and clean, wash and cut carrots into cubes.


Using a juicer, we squeeze juice from apples and carrots. The juice is foamy and quite cloudy. We let it stand for about ten minutes so that the foam thickens and it is easier to strain it.


We filter the apple-carrot juice through gauze folded in several layers. We send the juice to the pan, which we put on the fire and wait for the juice to boil. If desired, add a couple of tablespoons of sugar to the juice (this is not at all necessary, but if you really want to, why not). Boiled carrot-apple juice is poured into sterile half-liter or liter jars and immediately sealed with lids. Turn the juice jars upside down and leave to cool.


We send the cooled jars of carrot-apple juice for the winter to a cool, dark place (for lack of a pantry, I have an ordinary closet as such a place). After a couple of months, we take out the coveted jar and enjoy the most wonderful carrot-apple juice, prepared with our own hands, and not bought in a store. As for me, this is small, but still a reason for pride :)
