Ingredients:
1. Buckwheat - 180 g dry
2. Onion - 140 g (1 pc)
3. Carrots - 90 g (1 pc)
4. Mushrooms - 150 g, peeled
5. Chicken fillet - 370 g raw
6. Garlic - 1-2 cloves
7. Salt, pepper
8. Tomato paste - 50 g
9. Water - 400 ml
10. Vegetable oil

Cooking:

1. Rinse buckwheat thoroughly under cold water. Put the cereal on a fine sieve to glass the liquid.
2. Peel the onion, finely chop and fry in vegetable oil, stirring for 3-5 minutes.
3. Grate the carrots on a coarse grater and add it to the onion. Pour in a little vegetable oil and fry the vegetables for 5 minutes.
4. Next, add the peeled and chopped champignons. Stir fry the ingredients until the moisture evaporates.
5. Wash the chicken fillet and cut into small pieces.
6. Choose a suitable pan in which you will cook the dish. It must have a thick bottom.
7. Pour a few tablespoons of vegetable oil into the pan and add the chicken. Fry the meat until the pieces are evenly whitened on all sides.
8. Next, add the vegetable mixture, squeeze the garlic through the press. Salt and pepper the ingredients and mix them.
9. Dilute tomato paste in 400 ml of hot water from a kettle. Add salt, pepper, stir.
10. Pour buckwheat onto the mixture of chicken and vegetables. Smooth out the grits with a spoon.
11. Pour water with tomato paste into the pan, bring the liquid to a boil.
12. Next, tightly close the pan with a lid, reduce the heat to a minimum and simmer the dish for about 20-30 minutes, until cooked.
To check readiness, remove the lid and spread the swollen cereal with a spoon. If the water has completely boiled away, including at the very bottom, the buckwheat is ready in a merchant way.
14. Remove the pan from the stove and stir the contents. Ready! When serving, if desired, you can add greens and a piece of butter.

4. After that, send the pan to the stove, pour in the sunflower oil, warm it up. Add chopped onion, fry until golden brown, stirring occasionally.

5. After 5-7 minutes, add the mushrooms. It is best to use forest mushrooms. They are considered more fragrant and can give the dish rich features. If desired, you can cook this dish with champignons.

6. Be sure to stir the mushrooms with a wooden spatula so that they do not burn. After five minutes, add the chicken fillet to the mushrooms, mix thoroughly.

7. Fry chicken with mushrooms until golden brown. Fifteen minutes before the chicken is ready, put the washed and dried buckwheat into the pan.

8. Add salt, spices, black pepper, and bay leaf and dill. Advice! After the porridge is ready, take out the bay leaves and get rid of them, as they can add unnecessary bitterness.

Step 1: prepare buckwheat.

First of all, we select pebbles and any other rubbish from the buckwheat kernel. Then pour it into a deep bowl and rinse thoroughly in cold running water until the liquid becomes clear, while the remaining debris floats to the surface and can be easily removed. After we throw the buckwheat into a colander with a fine mesh and leave it in it for 5 7 minutes to drain off the remaining water.

Step 2: cook buckwheat.


In the meantime, we put a cauldron or a pan with a thick bottom on a strong fire and pour purified water into it. After some time, pour salt into boiling water to taste and buckwheat that has already dried.

We mix everything with a tablespoon until a homogeneous consistency, reduce the heat to a small level and cook the porridge under a tightly closed lid until fully cooked or until all the liquid has boiled away, about 20 25 minutes.

Step 3: Prepare the Chicken Breast.


While buckwheat is puffing on the stove, we prepare the rest of the products and cook the gravy. We take a fresh chicken breast, wash it under cold running water, dry it with paper kitchen towels, put it on a cutting board and remove the film, cartilage, and excess fat from it with a sharp knife. After that, cut the meat into small pieces or straws up to 2 centimeters thick.

Step 4: prepare vegetables.


Then we cut off the roots from each mushroom, and peel the garlic cloves from the husk. Rinse vegetables under running water and dry with paper towels. Put the mushrooms in turn on a cutting board and chop with a clean knife in layers up to 5 millimeters thick. Pass the garlic through a press or finely chop and immediately proceed to the next step.

Step 5: prepare the gravy.


We put a frying pan on medium heat and pour the right amount of vegetable oil into it. After a few minutes, we lower the chopped chicken there and fry it until the moisture is completely evaporated, stirring occasionally with a kitchen spatula. This will take 8 10 minutes.

Then we add layers of champignons to the chicken and cook them together, also until the mushroom juice has completely evaporated, this is 10 12 minutes. At this time, we check the porridge, if it is cooked, remove it from the stove.

Then pour the cream into the pan, put the chopped garlic, salt, ground black pepper to taste and cook the gravy for a couple more minutes. Then turn off the heat and let the fragrant mixture brew under the lid. 5 7 minutes. Cooking buckwheat with chicken and mushrooms:

Wash and dry the meat and mushrooms. Clean the onion. Wash the buckwheat.
