Ingredients

  • 500 grams of liver (chicken and pork);
  • 2 large heads of onions;
  • 2 large juicy apples, with dense pulp;
  • salt and black ground pepper - to taste;
  • one teaspoon of granulated sugar and 70% vinegar;
  • odorless sunflower oil - for frying.

Cooking

Wash the chicken liver running water, remove all the films. If the pieces are large, they will need to be cut. If you have pork or beef liver, also rinse under running water, remove all films and cut into fairly large plates (like steaks) about one and a half centimeters thick.

Apples for the preparation of this dish, according to tradition, are used green, sweet and sour. But I tried to do it with red, sweet apples: it also turned out very tasty. My apples, remove the core and cut into large slices. It is better not to peel them, otherwise they can turn into porridge during roasting.

We also cut the peeled onion into large slices. To prepare chicken liver, the process will be as follows. Warm up in a frying pan vegetable oil. We spread the chicken liver in it and fry over high heat until the liver becomes light and the blood stops flowing. Then put the apples on the liver, reduce the fire and continue to fry for another 4 minutes.

Lastly, add the onion to the pan, season with salt and pepper to taste, and continue to fry until the onion is tender, about 6 minutes. Pour 4-5 tablespoons of wheat flour into a deep plate and roll the pieces of cookies in it from all sides. Then turn on the stove to a medium level and put a frying pan with 2 tablespoons of vegetable oil on it. When the fat is hot, carefully place the liver pieces in it.


Fry them on 1 side. 2 - 3 minutes. Then, using a kitchen spatula, flip the pieces to the other side and fry them for another 3 minutes. Then reduce the temperature of the stove to a level between small and medium. Pour 50 milliliters of pure distilled water into the pan, cover the container with a lid and simmer the liver until tender and completely evaporate the moisture for 15 – 20 minutes. After we break open 1 piece of liver with a spatula. If the shade is gray on its cut, then the liver is fried well. If inside the piece is pink, with blood clots, then the liver is not ready, in this case we simmer it for a few more minutes and check again. We shift the finished liver into a deep plate.

Step 4: fry the onion.



We do not remove the pan from the stove and do not increase the temperature of the stove. Add 2 tablespoons of vegetable oil to the container, throw onion into the heated fat and sprinkle it with curry powder. Simmer the vegetable, stirring occasionally with a kitchen spatula until transparent, soft and golden brown. This process will take approximately 5 - 6 minutes.

Step 5: Preparing the Apples



Not forgetting to keep an eye on the onions, we prepare apples. We wash them under cold running water, dry them with paper kitchen towels and, using a fruit knife, peel them. After we remove the stalks from each fruit, cut them into 2 parts, cut out the cores with stones, put the halves on a cutting board and cut into slices up to 1 centimeter thick. Step 6: Bring the dish to full readiness.



After 5 - 6 minutes when the onion takes on the desired texture and color, add apple slices to it and simmer together 10 - 12 minutes until fruit is soft. We periodically mix them with a kitchen spatula, but do not get carried away, as the apples soften, they will become very brittle, so we try to mix the vegetable with the fruit carefully so that the slices do not lose their shape very much. When the apples soften, add pieces of the already cooled liver to them, very carefully mix all the ingredients of the dish with a kitchen spatula, cover the container with a lid and warm it up 5 – 10 minutes. After we lay out the liver with apples and onions in portions on plates and serve.

Liver with apples is served hot as a second, main hot dish. If desired, it can be served with any side dish you like, such as boiled rice, mashed potatoes, stewed, steamed or boiled vegetables.
